Roasted Turnips (Air Fryer or Oven Recipe)

Ingredients

  • 4 medium turnips
  • 2 teaspoons avocado oil
  • 1 1/2 teaspoons paprika
  • 1 teaspoon sea salt
  • 1 teaspoon cracked pepper
  • 2 teaspoons minced parsley

                                                                                     

Directions

  1. Preheat the air fryer to 390 degrees or the oven to 450 degrees.
  2. Peel and dice the turnips and place them in a medium mixing bowl.
  3. Add the avocado oil, paprika, sea salt, and pepper to the bowl and toss to coat.
  4. Spread the turnips in an even layer in the air fryer basket or on a large baking sheet.
  5. Air fry for 10 minutes, shaking the basket once halfway through cooking. Alternately, bake for 20-25 minutes or until the turnips are as soft and browned as you'd like.
  6. Sprinkle with parsley just before serving.

Ingredients

  • 3 cups diced peeled turnips
  • ¼ cup water
  • 1 cube chicken bouillon
  • 1 tablespoon butter, or more as needed
  • 2 tablespoons white sugar                                                                               

Directions

  1. Place turnips, water, and bouillon into a large skillet over medium heat; simmer until water has evaporated and turnips are tender, about 15 minutes.
  2. Stir butter into turnips until melted, then sprinkle with sugar. Gently simmer, stirring occasionally, until butter and sugar cook into a brown, sticky coating on turnips, about 10 minutes. Serve hot.

Raw Turnip Salad

  • 3 medium turnips, peeled and grated
  • 3 medium carrots, peeled and grated
  • 1/2 cup chopped parsley
  • 1 cup raw pumpkin seeds
  • juice of 1/2 lemon
  • 2 Tbsp olive oil
  • sea salt to taste                                                                               

Directions

  1. Wash carrots, turnips, parsley
  2. Peel and grate turnips and chop parsley.
  3. Place the turnips, carrots, parsley and pumpkin seeds into a salad bowl. Add the lemon juice and olive oil. Season with salt and toss to combine.
