8-minute Sauteed Sweet Potato

Ingredients

  • 1 large sweet potato
  • 2 tsp avocado oil 
  • 1 pinch salt 
  • Tahini sauce (optional)

Directions

  1. Slice sweet potato into thin circular slices (about ¼ inch or less)
  2. Heat a large pan over medium heat. Once hot add the oil into the pan and swirl to coat evenly 
  3. Lay the pieces of sweet potato into the pan, sprinkle with some salt, and cook for about 3-4 minutes. Reduce heat if needed. 
  4. Flip the pieces over and cook for another 3 minutes or until golden brown and fork tender. 
  5. Enjoy as is or serve with choice of sauce or dip (tahini, hummus. etc.) 


Honey Roasted Sweet Potatoes

Ingredients

  • 2 lbs sweet potato 
  • 1 tbsp olive oil 
  • 2 tbsp butter 
  • 1 lemon
  • ¼ cup honey 
  • 1 tsp salt

Directions

  1. Preheat oven to 425℉ to roast. Line a baking sheet with aluminum foil and set aside. 
  2. Peel and dice the sweet potatoes in bite-sized pieces. Add them to a large bowl and season with salt. Set aside. 
  3. In a pan, add the butter and olive oil and let it simmer for about 1-2 minutes over medium heat. Squeeze the lemon juice into the pan, add the honey, and let simmer for 1 minute on low heat. 
  4. Add the sauce to the sweet potatoes and toss to coat evenly 
  5. Transfer the sweet potatoes to the baking sheet and roast in the oven for 25 minutes. Check for golden brown color and fork tender. Add time if needed. 
  6. Serve! 


Baked Sweet Potato

Ingredients 

  • Two large sweet potato
  • Butter 
  • Pinch of salt 

Directions

  1. Preheat the oven to 425℉ to bake. Line a baking sheet with foil and set aside. 
  2. With a fork, poke holes into the all around the sweet potato and place onto the baking sheet. 
  3. Bake in the oven for about 40 minutes (longer if needed) until tender. 
  4. Let it cool, slice open the top, sprinkle some salt and place some butter and you're ready to eat! Feel free to add any other desired toppings such as honey or other seasonings/sauces.
