Squash (Cucurbita) is technically a rounded out fruit that ranges in shades of green, yellow, and orange. There are two main varieties: summer and winter squash, both of which flourish in sunny and moist conditions. Squash is harvested closer to the fall season and is popular to be prepared by roasting or made into a soup.

Roasted Butternut Squash

Ingredients 

  • 1 large butternut squash 
  • 1 ½ tbsp olive oil 
  • 2 tsp salt 
  • ¾ tsp cinnamon 
  • 2 tbsp maple syrup
  • Rosemary (optional)

Directions

  1. Preheat oven to 400℉. Line a baking sheet with foil and set aside. 
  2. Peel and cut squash into small bite size cubes and place in a large bowl. Add olive oil, maple syrup, salt, and cinnamon. Coat the cubes evenly and transfer to the baking sheet. Spread them out with no overlap. 
  3. Bake for 15 minutes, flip the cubes over and bake for another 15 minutes (until tender)
  4. Sprinkle rosemary if desired and serve!


Steamed Butternut Squash

Ingredients 

  • 1 large butternut squash 
  • 3 tbsp olive oil 
  • 4 cloves garlic 
  • 1 tsp salt 
  • ⅓ cup dried herb mix 

Directions

  1. Peel and cut squash into small bite size cubes. 
  2. Bring an inch of water to a boil over medium heat in a pot fitted with a steamer basket. Add squash to the basket, cover and steam for about 15 minutes. 
  3. While squash is steaming, mince garlic cloves. Heat olive oil in a pan over medium heat. Add the garlic and stir often until garlic is fragrant. 
  4. Transfer the garlic oil mixture into a large bowl, add the herbs and mix. 
  5. Once squash is done, add to the bowl and gently stir to combine and coat evenly. Add salt and serve! 


Mashed Butternut Squash

Ingredients 

  • 1 large butternut squash 
  • ⅓ cup melted butter
  • 2 tbsp brown sugar  
  • ¼ tsp cinnamon 
  • ½ tsp salt 
  • ¼ cup light cream

Directions

  1. Preheat oven to bake at 350℉. Cut the squash longways down the middle and scoop out the seeds. 
  2. Brush the squash with butter and sprinkle with brown sugar, cinnamon, and salt. 
  3. Place the squash pieces on a baking sheet and bake for 1 hour. 
  4. Once baked, scoop out the flesh and place into a large bowl. Mash (hand masher or electric) until smooth. Pour in cream and melted butter to taste.
  5. Serve with more salt, cinnamon, brown sugar, or all three if desired!
