Fresh Radish Salad

Ingredients

  • 300 g fresh radishes
  • 1 handful fresh parsley
  • 1 handful fresh dill
  • 2 tbsp olive oil
  • ½ lemon juice
  • ½ tsp salt
  • ½ tsp black pepper       

Directions

  1. Wash and slice radishes into thin circles.
  2. Transfer to a bowl and add chopped herbs, olive oil, lemon juice and spices.
  3. Mix well and let it sit for 5 minutes.
  4. Serve with the marinade and more olive oil. Enjoy!

Sauteéd Radishes

Ingredients

  • 1 lb Radishes (trimmed and quartered – weight without greens; ~24 radishes)
  • 1 1/2 tbsp Olive oil
  • 1/2 tsp Garlic powder (optional)
  • 1/2 tsp Sea salt
  • 1/4 tsp Black pepper
  • 1 tbsp Unsalted butter                                                                               

Directions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the quartered radishes in a single layer. Season with garlic powder (if using), salt, and pepper.
  3. Saute the radishes, stirring occasionally, for about 8-10 minutes, until radishes are soft and browned. Don't stir constantly, which will prevent browning. If your pan get very hot (such as if using cast iron) and the radishes brown too much before they are soft, reduce heat as needed.
  4. In the last 2 minutes of cooking, add the butter to the pan (it will melt). Stir to coat and finish sauteing.

Garlic Parmesan Air Fryer Roasted Radishes

Ingredients

  • 12 oz bag Radishes, trimmed and halved
  • 1 Tbsp (16g) Olive Oil, divided
  • 1 clove Garlic, crushed*
  • Pinch of Kosher Salt
  • 2 Tbsp (15g) Grated Parmesan
  • 1/4 tsp Red Pepper and Parsley Flakes (optional)                                                                                   

Directions

  1. Cut the radishes in half (quarter any extra large radishes) and toss with 1/2 Tbsp (8g) olive oil. Add the radishes to an air fryer basket and cook for 8 minutes at 400ºF.
  2. In the same bowl, add the remaining 1/2 Tbsp of olive oil, crushed garlic, salt, red pepper, and parsley flakes. Stir everything together.
  3. After 8 minutes in the air fryer, add the radishes back to the bowl with the olive oil mixture, tossing to evenly coat. Add the grated parmesan and stir everything together until the radishes are evenly coated in parmesan.
  4. Place the radishes back in the air fryer basket and cook for an additional 6-8 minutes at 400ºF until crispy golden brown.
