15-minute Satuéed Bell Peppers

Ingredients

  • 3 bell peppers , cut into ½-inch strips
  • 1½ Tablespoon olive oil
  • 1 teaspoon dried thyme
  • ½ teaspoon salt


Directions

  1. Heat oil in a large skillet or Dutch oven over medium heat.
  2. Once the oil is hot, add the sliced peppers and season with salt and thyme.
  3. Cook, stirring occasionally, until the peppers are tender and starting to brown, about 10-15 minutes or until your preferred tenderness is achieved

Easy Stuffed Peppers Recipe

Ingredients

  • 6 bell peppers, variety of colors
  • 1 lb. lean ground beef
  • ½ cup onion, diced
  • 2 tsp minced garlic
  • 1 cup cooked white rice
  • 1 tsp salt
  • 14 oz. petite diced tomatoes
  • 8 oz. tomato sauce, divided
  • 1 cup shredded zucchini
  • 2 tsp Italian seasoning
  • 1 cup mozzarella cheese, shredded


Directions

  1. Preheat the oven to 350 degrees F.
  2. Bring a large pot of water to a boil. Cut the tops off of your peppers and pull out the seeds and membranes, creating a nice cavity inside. Dip the peppers into the boiling water, letting them cook for just 2 minutes, then pull them out and drain on paper towels.
  3. Meanwhile, brown the ground beef and onion in a skillet, then drain any fat. Add in the garlic and stir until fragrant. Next, toss in the cooked rice, half of the tomato sauce (save the other half for later), diced tomatoes, shredded zucchini, Italian seasoning and salt. Stir to combine and cook until heated through.
  4. Spoon the ground beef mixture into each of the prepared peppers and then place in a casserole dish. Top each pepper with about a tablespoon of the tomato sauce and cover the dish with foil.
  5. Bake for 10 minutes, remove foil and continue baking for an additional 15 minutes. Top with the shredded mozzarella cheese and bake for 3 more minutes, or until the cheese is melted. Enjoy!

Zesty Mini Bell Pepper Salad Recipe

Ingredients

  • 1 lb sweet multi-colored mini bell pepper
  • 1/2 of a medium sweet onion or purple onion, thinly sliced
  • 2 Tbsp Fresh dill, chopped
  • 2 1/2 Tbsp white vinegar or Fresh lemon juice, I preferred the vinegar
  • 3 Tbsp extra virgin olive oil
  • 1/2 tsp garlic salt, or to taste
  • Pinch of black pepper



Directions

  1. Remove the tops and seeds from bell peppers, then cut them in half lengthwise and cut into thin strips. It was quicker to stack two bell peppers and cut two halves at a time. Transfer sliced bell peppers to a large mixing bowl.
  2. Thinly slice onion and add it to the bowl along with chopped fresh dill.
  3. Combine 2 1/2 Tbsp vinegar with 3 Tbsp extra virgin olive oil, 1/2 tsp garlic salt and a pinch of pepper. Whisk the dressing together with a fork. Pour dressing over salad ingredients and stir well to combine. Add more garlic salt to taste if desired. You can serve the salad right away or refrigerate until ready to serve. It even tastes great after being refrigerated overnight!
