Garlic Parmesan Roasted Asparagus

Ingredients 

  • ½ lb asparagus 
  • ½ tsp salt 
  • ½ black pepper 
  • 3 cloves garlic (minced)
  • 3 tbsp grated parmesan 
  • 2 tbsp olive oil 

Directions

  1. Preheat oven at 425℉ to roast. Line a baking sheet with foil and set aside. 
  2. Rinse the asparagus and trim off the thick ends. Spread them out onto the baking sheet. 
  3. Drizzle with olive oil and use your hands to coat evenly. Sprinkle with salt, pepper, garlic, and parmesan. Mix well. 
  4. Roast for 5-8 minutes. Check for tenderness and serve! 


Pan Fried Asparagus

  • ¼ cup butter
  • 2 tbsp olive oil 
  • 1 tsp salt 
  • ¼ tsp pepper

Sauteed Asparagus

  • 2 tbsp olive oil 
  • 1 lb asparagus 
  • ¼ tsp salt 
  • 1 tsp lemon juice 

Directions

  1. Prepare the asparagus by removing ends and cutting into 2 inch pieces. 
  2. In a pan, heat the olive oil over medium heat. Add the asparagus and salt and saute for 3-6 minutes, until tender. 
  3. Remove from heat and toss with lemon juice. Season to taste with more salt and serve!
